I'm going to attempt to get my group to try Starfinder. They are mostly teenagers who have only played 5e up to this point - but I really need a break from the genre and system.
I'm assuming that the Beginner's Box is a good first step, but what after that? Is there a follow-up adventure? Or for an AP - what's a good introductory AP for a new group (including GM)? Something that will hit the high spots, have plenty of action, be relatively straightforward, etc.?
Would appreciate any advice. I'm Day One, just learning my way around this game.

The beginner's box is not the full rules. It won't be enough to move on to an AP. The best way to start is to get the Core rule book. All the rules are online for free at Archives of Nethys .
Junker Delight is a good one shot adventure it's written for new GMs. Altho not related The Liberation of Locus-1 start at the level Junkers Delight ends at.
If you already have the beginners box it's just a short dungeon crawl to help teach the nuts and bolts of the system minus KEC/EAC and stamina points. I would just run it with the pregens to learn then start over with new characters using the full rules.

I picked up the Core Rulebook and Junker's Delight yesterday at my local gaming store. I also picked up the Beginner's Box (pawns, battlemat, etc., still made it seem a good value). But yeah, I agree after looking at the Beginner's Box - it IS very limited. Even moreso than the Pathfinder 1 & 2 Beginner Boxes.

Looking at all the APs, I can't help but to feel like Dead Suns book 1 is still the best introduction for new players, though the following books don't keep up.
There's always the Into the Unknown quest pack. It's quite alright, even more if you skip the first starship combat. Perhaps even the second. This is Starfinder Society, but you can easily dismiss those details if you don't want to join organized play.
After that... it's complicated. None of the APs really standout - some of the society stuff is alright. There are some more free adventures, though I really don't like the skittermander stuff.

people really like the beginner box.
Junker's Delight is a 1st-3rd level adventure which is also well-received [i haven't played it]
if you want to run a campaign, AGAINST THE AEON THRONE would be my recommendation. 3 books, nice and quick, all of which are very good.
